Power Balls Recipe



I am always looking for a new quick and easy snack to grab while literally running out the door. For the past two years we have been in a perpetual busy season with no plans of slowing down anytime soon! Lately, meal planning, weekly food prep, and healthy and convenient have become a priority and major life and money saver of us.

While taking a quick lunch break in the early afternoon, I love to browse Pinterest boards, cookbooks, and blogs for new recipes that I can make when having people in our home or just surprising Tim with. These Power Balls are an easy and healthy option for when you are craving a quick snack.



1 1/2 cups of old fashioned oats 1/4 cup of flax seed 2 tsp of chia seeds 2/3 cup toasted coconut 1/3 cup organic peanut butter 1/2 cup organic almond butter a sprinkle of cinnamon 1/2 cup of miniature chocolate chips 1/4 cup of honey 1 tsp vanilla extract *add a TBSP of vanilla protein for an extra boost!



step 1 – Gather the ingredients, two medium mixing bowls, and a wooden spoon. step 2 – Mix together all of the dry ingredients. (toasted coconut, flax seed, chocolate chips, cinnamon, vanilla protein) step 3 – Mix together all of the wet ingredients (honey, vanilla extract, peanut butter, and almond butter) and stir. step 4- Once both mixtures have an even texture, pour the liquid mixture into the dry mixture while continuously stirring. step 5- Use a tablespoon to scoop out the mixture and then roll into 1 inch balls. A large kitchen spoon is great to use for rounding out the shape, or you can just use your hands! If the mixture is too gooey, try putting it in the fridge for 20-25 minutes. This should do the trick! step 6- Refrigerate your energy bites so they stay firm until they’re ready to be eaten.



And that’s it! A simple and fast snack perfect for an on-the-go mom or any fast pace life - but without all the additives. If you’re really worried about sugar content, leave out the chocolate chips altogether. That’s the best thing about this recipe, you can’t mess it up!
